Ingredients:
- 4 cup brussels sprouts, halved
- 2 Tbsp olive oil
- Salt to taste
- Pepper to taste
- 2 avocados sliced
Directions:
- Heat oven to 400 degrees.
- In a small bowl, toss brussels sprouts, olive oil and salt and pepper.
- Place on baking sheet and roast for 35 – 40 minutes, shaking pan every 5 – 7 minutes.
- Remove from oven and allow to cool slightly.
- Top with avocado and serve.
- Serves 4.
