Turkey & Cauliflower Rice Stuffed Bell Pepper

Stuffed Peppers Turkey and Cauliflower Rice

These ground turkey and cauliflower rice stuffed peppers will surpass your expectations. I always make a double recipe, they keep in the fridge beautifully for a couple of days.

Ingredients:

  • 12 oz lean ground turkey
  • 2 large red bell peppers, sliced lengthwise in half
  • 1 cup cauliflower rice
  • 8 oz shredded cheddar cheese
  • 2 cloves of garlic
  • Cumin
  • Paprika
  • Pepper
  • Fresh cilantro to taste
  • 4 tablespoon coconut oil

Directions:

  • Preheat your oven to 300 degrees.
  • In a pan, add coconut oil, cook ground turkey for 5 minutes. Set aside.
  • In a bowl, add turkey, cauliflower rice, minced garlic clove, cumin, paprika, pepper, and cilantro. Mix well.
  • Stuff this mixture in the pepper. Top with shredded cheddar cheese.
  • Grease a baking dish with cooking spray. Place the pepper on it and bake for 5 minutes or until cheese turns golden.
  • Serves 4.
